Cornbread Recipe

Some of us had a (short) discussion about cornbread, so I thought I’d post up the recipe I use.

  • 1 cup of Polenta
  • 1 cup of plain flour
  • 1 1/2 teaspoons of baking powder
  • 1/2 teaspoon of salt
  • 2 tablespoons of sugar
  • 60 grams of butter, melted
  • 1 egg, beaten
  • 250 ml of milk
  1. Pre-heat your oven to 180 degrees Celsius.
  2. Sift together the dry ingredients.
  3. Mix together the butter, egg, and milk.
  4. Gradually combine the dry and wet ingredients.
  5. Pour into a baking tin (lined with baking paper, or greased, or whatever).
  6. Cook in your oven for about 25 minutes.
  7. Eat when ready.
