Pumpkin Scones

My siblings would remember that I used to cook pumpkin scones all of the time. Well, I cooked some tonight (probably the first time since I’ve been married), using a modified recipe… and I’m giving it away for free! (yay!)

  • 60g butter
  • 1/4 cup raw sugar
  • 1 egg
  • 1 cup cooked, mashed pumpkin
  • 2 1/2 cups plain wholemeal flour
  • 2 1/2 tsp baking powder (or, alternatively just use self-raising flour) 😉

  1. Preheat oven to… ummm… 230 deg. Celsius
  2. Cream butter and sugar (in a bowl, stupid)
  3. Add egg and beat well
  4. Add pumpkin, and beat well (again)
  5. Mix flour and baking powder together, and combine with everything else
  6. Turn out onto a floured surface (I used our table, made a bit of a mess) and lightly (don’t bash it) flatten it out to around 1 1/2 cm thick
  7. Cut into circles (aka “rounds”), or do as I did and make squares (oooh, original!)
  8. Put uncooked scones on a tray with baking paper, brush a bit of milk (or egg if you prefer) over the tops, and shove them in the oven
  9. Cook for 10 minutes
  10. Remove from oven
  11. How many more steps can I make up?
  12. Cut scone in half (with a knife, duh!)
  13. Apply butter liberally (or jam, or cream, or jam and cream, or vegemite if you’re a freak)
  14. Insert into mouth (the scone, not the knife)
  15. Munch munch munch
  16. Goto step 12

Well, that was long and drawn out. Anyways, I’ve got scones to eat. And yes, I did make these at 9pm. Freak.
